vietnamese dipping sauces

Recipe 1

  • 3 tbsp caster sugar
  • 2 tbsp lime or lemon juice
  • 60 ml white wine vinegar
  • 60 ml fish sauce (optional)
  • 60 ml water
  • 1 large red chilli, sliced


mix the sugar with the lemon juice, vinegar, fish sauce and water.
stir until the sugar dissolves. add garlic and chilli and blend.

 
Recipe 2

  • 250 ml vinegar
  • 1/2 head garlic, chopped
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 red chilli, thinly sliced


mix all ingredients in a bowl.


both are great for spring rolls.
