sweet and sour onions

  • 50g butter
  • 75ml/5 tbsp sugar
  • 120ml white wine vinegar
  • 30ml/2 tbsp balsamic vinegar
  • 700g pickling onions/shallots

heat the butter in a heavy based saucepan and add the sugar. heat gently until the sugar dissolves.

add the onions and vinegars and stir well. season with salt and pepper.

cook for 20-30 minutes until the onions turn golden.
