2 tbsp olive or sunflower oil
2 tbsp butter
1 kg small new potatoes, washed and halved
1 onion, halved and thinly sliced
5 tbsp white wine
2 tbsp olive or sunflower oil
5 tomatoes, thickly sliced
1 bayleaf
preheat the oven to 200˚C.
use the butter and oil to grease a large roasting dish with lid.
place the potatoes and onion in the dish and season with salt and pepper. drizzle with the wine and oil. add the bayleaf and turn through. cover with the lid and place in the oven for 30 minutes.
remove from the oven and mix again. place back into the oven without the lid for 20 minutes.
add the sliced tomatoes and roast for another 15 minutes without the lid.
