piri piri oil

PIRI PIRI OIL

makes 2 small jars
 

  • 8 fresh red piri piris (bird's eye), roughly chopped, seeds left in
  • 1 tbsp chilli flakes
  • 2 tsp salt
  • 3 garlic cloves, roughly chopped
  • 1 tsp grated lemon zest
  • 2 tbsp lemon juice
  • 4 tbsp whisky
  • 2 tbsp red wine vinegar
  • 2 bay leaves
  • 300 ml olive oil


make a rough paste from both types of chilli, garlic and 4 tbsp olive oil.
use a processor or mortar and pestle.

transfer into a small pan, add the bay leaves, lemon juice and zest, whisky, vinegar and salt. 
heat slowly and simmer gently for a couple of minutes. turn off the heat and stir in the remaining oil.

pour into sterilised jars. place a bay leaf into each.
leave to infuse for a couple of days.

the oil and the paste from the bottom of the jar can be used for cooking and flavouring finished meals.
