noodles with prawns and peanuts

  • 3 tbsp peanut oil
  • 3 red chillies, sliced
  • 3 spring onions, chopped
  • 1/2 tsp ground coriander seeds
  • 2 kaffir lime leaves, 1 of them chopped finely
  • 1 lemongrass, finely chopped (or 1 tbsp of prepared lemongrass from jar)
  • 1 garlic clove, crushed
  • 1 white or red onion, sliced thinly
  • 1 red or green pepper, sliced thinly
  • a handful of green beans or mange tout, sliced
  • 1/2 tsp sugar
  • 2 tbsp fish sauce (optional)
  • juice of 1 lemon
  • 200 g raw large prawns, de-veined
  • 150 g raw peanuts, dry roasted and coarsley ground
  • 100g beansprouts

 

  • 200 g noodles (rice stick or other)
  • 1 tbsp peanut oil
  • 1 tbsp chopped coriander leaves
  • 1 spring onion, chopped

 

 

prepare the noodles according to instructions and rinse them in cold water.

heat 3 tbsp oil in a wok. add the coriander seeds, kaffir lime leaves, lemon grass, spring onions and chillies. stir fry for 30 seconds. add the garlic and stir fry for further 30 seconds. add the vegeatables, sugar, fish sauce and stir fry for about 1 minute.

stir in the prawns together with the lemon juice and half the peanuts. cook, stirring, until the prawns are pink.

reheat the noodles (pour boiling water over them and drain) and add 1 tbsp oil. mix well. add the noodles and the beansprouts to the wok and combine well. heat through. remove the whole kaffir lime leaf.

serve with spring onion and coriander leaves.
