preheat the oven to 175˚C. grease a cake tin well with butter.
whisk the eggs and sugar for a couple of minutes until the mixture thickens.
add the milk, melted butter, olive oil, vanilla essence and lemon zest and whisk a little to combine well.
sift the flour with the baking powder and gradually add to the the rest of the ingredients, whisking a little between each addition. only whisk enough to mix it in well.
leave to stand for a few minutes. add 1/3 of the fruit and stir with a wooden spoon. pour into the cake tin and bake for 15 minutes.
take out of the oven and scatter the remaining fruit on top.
bake for about 30 minutes until the top is golden.
