  • 1 tsp salt
  • 1 tbsp butter
  • 400g fine semolina
  • 2 - 3 eggs
  • fresh or frozen fruit (strawberries or other)

to serve:

  • butter, melted
  • icing sugar
  • quark

bring the milk with salt and butter to boil in a large pan. whisk in the semolina and cook for a couple of minutes, stirring the whole time, until the mixture comes off the sides of the pan.

when cool enough to handle with hands, add 2 whole eggs and knead until smooth. add another egg if it's too thick.

make logs about 10 cm in diameter. cut thick slices from the logs, place a strawberry well coated in caster sugar in the middle and by pulling out the edges, close well and roll into a ball.

bring a large pan of water to boil and cook the dumpling in batches until they float to the surface.

serve with the melted butter, icing sugar and crumbled quark.
