slice aubergine and brush with olive oil. place under a hot grill until lightly brown (both sides).
chop the aubergine slices finely and mix with all other ingredients except flour and vegetable oil.
leave to rest for half an hour. if the mixture is too moist, add more breadcrumbs.
make 10 balls. coat them lightly in the flour seasoned with salt and pepper and flatten them a little.
shallow fry in the vegetable oil for 1-2 minutes on each side.
